Homemade banana loaf

We LOVE Banana loaf in the Truly office, as it's a great way of using up those overripe bananas that normally end up in the bin at the end of the week.

Ingredients

2 ripe bananas (the riper the better!)

170g self-raising flour

170g caster sugar

170g soft margarine

3 eggs

Few drops of vanilla essence

Method

Preheat your oven to 180 degrees.

Combine all of the ingredients, we're lazy and find a food processor works best!

Line your loaf tin with baking parchment and gently pour in the mixture.

Bake for 45 minutes to 1 hour, make sure to check after 45 minutes with a skewer. The trick is if it comes out clean, your loaf is ready!

Once ready, place on a cooling rack and leave to cool before tucking in!


If you're struggling to get your kids to eat anything remotely healthy, you can always add some chocolate chips or to make it more adult-friendly, add 60g chopped walnuts and combine it with your mixture.
