Vegan banana bread

Even if you aren't vegan you will love this banana bread recipe. It's delicious, moist on the inside and so easy to make. A tasty mid-morning treat to enjoy with a cup of tea.

Ingredients

 

225 g bananas mashed, approximately 4

114 g vegan butter softened

200 g granulated sweetener of choice sugar, coconut sugar etc

1 tsp vanilla extract

60ml unsweetened almond milk (any dairy free milk will work)

1 tsp apple cider vinegar

1/4 tsp salt

3/4 tsp baking soda

250g all-purpose flour gluten-free, if needed

How-to

1) Pop on the oven to 180C/350F. Take a loaf pan and line with baking paper and set it aside for later. We made it slightly different by using a heart shaped tin, so feel free to use a pan of your choice.
 
2) Grab a large mixing bowl, add your mashed banana, sweetener, softened butter and vanilla. Whisk together until combined and smooth. Then, add the rest of your ingredients, mix well until fully combined.
 
3) Next, pour the mixture into your lined pan and bake for 60-70 minutes, or until a skewer comes out clean.
 
4) Allow your banana bread to cool in the pan completely, before slicing up.
